It stops the lager from foaming up so much. If the glass was not wet then the head would be too big so the bartender would have to wait for the pint to settle before topping it up to a full pint.Why do the bartender in Austria wash an already clean glass with water before pouring up a pint of lager?
The chemicals and bleach from the glasswasher can slightly taint both the taste and smell of the beer. It's not dangerous in anyway but the smell is a turn off to beer lovers. Same goes for wine glasses...but they're usually polished with hot water and (a touch) of vineagar to get rid of the spots, which naturally levels off the bleach/chemical odors.Why do the bartender in Austria wash an already clean glass with water before pouring up a pint of lager?
To get rid of any dust that may have accumulated.
If they did not grab the glass from a freezer of refridgerator they were probably not washing it at all. They were probably using the extra rinse to get the class colder.
I do that when I run out of chilled glasses.
